Don’t get worried, I’m not going all GOOP on you. I’m not living on juices and water scented with leek essence or anything—I mean, come on, this. I’m supplementing my hearty winter lunches with a tall glass of veggie juice to boost my vegetable consumption and my hydration, two things I have trouble with—and because it’s *delicious*.
Friends of mine gave me a juicer over the holidays and I have been recreating the best juice from my favorite midtown takeout joint. In fact, back in the day, their grilled cheese plus one of these juices was a regular lunch of mine, and the combo was, dare I say, even better than the classic pairing with tomato soup, because the bracing bite of raw garlic in the cold, refreshing juice was the perfect foil to the gooey-crisp warm sandwich.
So here’s the deal. For one large glass of juice, push 2 stalks of celery, 1 carrot, 1 beet, several kale leaves (optional), and 1 garlic clove through a juicer. Top off with some tomato juice or Clamato*, or else juice 1 large tomato and add a large pinch of salt and a squirt of lemon. Swirl it all together and enjoy. Now that I am regularly drinking this juice, I haven’t experienced any cold symptoms in 6 whole days, which for those of you without small children, is the equivalent of a whole winter!
*I apologize to the 95% of you that just started dry-heaving at the thought of this, but to that other 5%—it’s magic, right?
